It’s hard to think that June 21, the formal start of summer, was just six weeks ago as we move the calendar from July to August. The first “wow” is: Wow, where did the time go? TV is airing back-to-school advertisements, stores are stocked with school supplies, and (gasp!) kids are actually returning to school.
Even if, like me, you don’t have children returning to school and even if you reside in the Arizona desert where it’s still over 100 degrees or some other place where it’s still not fall-cool, I suspect that you, too, are feeling a sense of loss as the hot winds of summer gradually fade away. The good news is that there is still a significant amount of summer left. September 23, or more than 8 weeks from now, is the first day of fall.

Therefore, exhale. Take it extremely easy when adjusting to the busy fall schedules. Enjoy the remaining summer as much as you can. These treats, which are from some of the hottest (sorry, coolest! cookbooks), can be useful. The perennial summertime favorite ice cream is featured in two of the recipes: Pistachio and Brown-Buttered Candied Bacon (!). Serve Brooklyn Egg Cream Sodas as an easier option. Throw some fruit on the grill for recipes like Grilled Strawberries with Limoncello Sorbet or Roasted Peaches with Amaretti Filling because you’ll be cooking outside anyhow.
On the beach (my beach vacation isn’t till next month), Old-Fashioned Peanut Butter Cookies will disappear quickly, and the Beat-the-Heat Frozen Dessert Pizza will undoubtedly be devoured before anything begins to melt. Some of these recipes will undoubtedly convince you to fire up the oven, especially given how quick and simple they are—just think of the ready-made cake and cupcake mixes that produce amazing results for the Chocolate Turtle Cake and the “Ice Cream” Cone Cupcakes, for example. Naturally, whether you select Blueberry Crumble or S’mores (or both? ), you shouldn’t forget the pies. Finally, here’s the summer show-stopper if you’re up for a challenge that will produce results that will make you want to lick the cups clean: Salted Butter Caramel-Chocolate Mousse (also known as Salted Butter Chocolate Mousse).
Embracing the Moment
Yes, the new calendar page is considerably busier. All the more reason to take it easy before things become crazy and savor the last summer days and treats. Why, then, is there a second “wow”? Same as the opening statement: Where did the time go?
